Named after the Mandheling people residing in northern Sumatra, Sumatra Mandheling coffee offers a captivating taste of Indonesia’s diverse coffee heritage. Situated as the largest and westernmost island in Indonesia, Sumatra boasts an array of tropical flora, fauna, and microclimates, providing an ideal setting for coffee cultivation. Spanning from 0.5 to 2.5 hectares, farms on Sumatra are spread across remote regions, interconnected through a network of collectors, processors, traders, and exporters facilitating the integration of Sumatran coffee into the global market.
Our Sumatra Mandheling coffee beans originate from smallholder farms in the Aceh province, where the combination of rich soil and high altitudes creates optimal conditions for cultivating Arabica coffee.
Embracing the Wet-Hulled Coffee Process (Giling Basah)
Indonesia’s humid climate necessitates the utilization of the wet-hulled coffee process, locally known as Giling Basah, which has become synonymous with Indonesian coffees, imparting a distinctive flavor profile.
During the wet-hulled process, coffee cherries undergo depulping at the farm level using hand-cranked machines. Following depulping, the cherries are fermented overnight to facilitate the breakdown of mucilage, which is subsequently washed away. Subsequently, the coffee is quick-dried to achieve a moisture content of 30-50%, and then dried further to between 11%-13% as it progresses through the supply chain to an exporter’s mill.
