Indonesian Sulawesi Kalossi Coffee Beans
From Sulawesi, formerly known as Celebes, “Kalossi” derives from the Dutch term for the island predating “Toraja” as a name for its coffee. Producers in this region benefit from optimal conditions for coffee cultivation such as volcanic soil and dense forests providing shade, maintaining essential moisture for the coffee plants. Small family farms manage their own coffee cherries and employ the wet-hulling process, where beans are left exposed during drying on patios before being collected and transported to a central dry mill for final preparation, sorting, and export.
Kalossi offers an exceptional cup, particularly suited to those fond of a full-bodied, aromatic, wild and spicy, highly-complex brew, with a touch of funkiness compared to Toraja, acquiring additional earthy character from the surplus chaff. Sulawesi Kalossi is similar to Indonesia Sumatra coffee.
Embracing the Wet-Hulled Coffee Process (Giling Basah)
Indonesia’s humid climate necessitates the utilization of the wet-hulled coffee process, locally known as Giling Basah, which has become synonymous with Indonesian coffees, imparting a distinctive flavor profile.
During the wet-hulled process, coffee cherries undergo de-pulping at the farm level using hand-cranked machines. Following de-pulping, the cherries are fermented overnight to facilitate the breakdown of mucilage, which is subsequently washed away. Subsequently, the coffee is quick-dried to achieve a moisture content of 30-50% and then dried further to between 11%-13% as it progresses through the supply chain to an exporter’s mill.
