Natural Processing Method for Unroasted Coffee Beans
In the sun-drenched Cerrado, natural processing reigns supreme. Harnessing ample sunlight, Brazilian farmers employ the natural process to handle large quantities of harvested cherries daily. After pre-drying under the sun for 2 to 7 days, with a preference for full sun exposure whenever feasible, the cherries may undergo final drying in mechanical driers. Following a 30-day resting period in wooden boxes to ensure uniformity, the coffee is primed for export.
